Makes one 9" pie or sixteen 3" Creamy Pumpkin Pie Tarts.
Ingredients
(1) unbaked 9" pie shell or (12-16) pie tarts
(2) cups (One 16oz can) pumpkin
(1) can (14oz) condensed milk
(2) eggs
(1) tsp cinnamon
(1/2) tsp salt
(1/2) tsp ginger
(1/2) tsp nutmeg
** whipped cream and nuts optional
Directions:
Preheat oven to 425 degrees
In a large bowl, combine ingredients and mix well. Pour the mixture into an unbaked pie shell and bake for 15 minutes. Reduce heat to 350 degrees and bake 25-30 more minutes, or until a knife inserted 1" from the edge comes out clean. Cool and serve with whipped cream and nuts.
For tarts, pour 1/4 cup of mixture in each tart shell and bake 20-25 minutes at 375 degrees.
